A very badly performing project is often a sign that Google Docs converted it to ODT.
Google Docs creates ODT files with an incredible number of spurious spans and styles. Each paragraph has its own style, and each word (and the following space) also has its own span and style. This bloats the file enormously and slows down Jutoh document viewing and ebook compilation.
Use LibreOffice to open and save the document - this will often reduce the file size considerably. Then clean up the unnecessary text styles using Format | Book | Formatting Cleanup or Format | Clear Direct Formatting. Or, you can export as plain text and reformat the project in Jutoh.
Alternatively, or if the above doesn't work, you can use a combination of Find & Replace and bulk style deletion to remove redundant styles in Jutoh. For more on this, please see How do I remove unused styles from a style sheet?.
