If you have multiple paragraphs within a single list item, the second and subsequent paragraphs are called continuation paragraphs. When previewing your book, you may notice that continuation paragraphs do not have any paragraph space in front of them. This is due to the fact that the old KF7 format can only handle single paragraphs within a list, so Jutoh creates line breaks to simulate multiple paragraphs.
To fix this, you can turn off KF7 support, which is very seldom needed now. In your Kindle configuration, find the option KF7 compatibility and set it to none to remove all KF7 compatibility, or, to just remove KF7 list compatibility, you can set it to table, paragraph, image.
