To rename the project file itself (as opposed to the book title), you can use the menu command File | Save As, and delete the original file via your operating system (see How do I delete a project file?). Or you can close the project, and rename the file in the usual way using your operating system. Then open the project file using File | Open since the old name will be listed in Recent Projects.
To change the official book title, click Edit on the toolbar, and edit the title in the metadata. Also edit the title on your title page. Then compile your book again.
To rename individual documents within the project, click on the title above the document editing area and type, or use the menu command Document | Edit Title. These titles will only be used in the table of contents (and not even then if you're using an advanced table of contents).
You can also change the ebook file name without changing the project file or title. To do this, edit your configuration(s) by clicking on Edit next to the current configuration, and edit the value of Book file name. By default, it contains the %FILENAME% keyword so that the project file name will be used plus an appropriate ebook extension. You can append text to %FILENAME%, or replace the value entirely. The next time you compile your book, the new file name will be used.
